Snickerdoodles. Sugar cookies with a funny name




Snickerdoodles

This is a recipe from Betty Crocker's Cooky Book.

1 cup shortening.  I have used coconut oil before and they turned out great.  I also have used Crisco and that works too.  
I like that these cookies can be mixed by hand.  You don't have to bust out an electric mixer.

1 to 1 1/2 cup sugar
2 eggs
2 3/4 cups flour
2 tsp. cream of tartar
1 tsp. soda
1/4 tsp. salt

2 Tbsp. sugar
2 Tbsp. cinnamon

Heat oven to 400 degrees.  Mix shortening, sugar and eggs thoroughly.    Blend flour, cream of tartar, soda, and salt in another bowl or pile these 3 ingredients into the original bowl.   
Stir into shortening mixture.  
Shape dough in 1" balls.   I like that this dough seems to always be easy to roll and it doesn't stick to one's hands. 
Roll in the mixture of 2 Tbsp. sugar and 2 Tbsp. cinnamon.  
Place 2" apart on an ungreased baking sheet.  
Bake for 8 to 10 minutes. 
These cookies puff up at first, then flatten out.  
Makes 6 dozen cookies.
