If you have a lot of celery make cookies?



2 cups of Celery cookies.  Celery doodles from the name Snickerdoodles!

a delicate and less sweet cookie.  You don't need an electric mixer to make these cookies

2 eggs
2 Tbsp. milk
 1 1/2 sugar
3/4 cup oil
3 cups flour
1/2 tsp soda
1 tsp. baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp vanilla
1 tsp. lemon extract   or anise
2 cups finely chopped celery
3/4 cup wheat germ
cinnamon

Preheat oven.to 350.
Blend together eggs, milk, sugar and oil.  Sift dry ingredients together and stir into egg mixture.  Add vanilla and lemon extract.  Fold in celery and wheat germ; mix thoroughly.  If dough is stiff, add more milk, one Tbs at a time.  Drop better onto un-greased baking sheet, making small cookies about the size of a silver dollar.  Sprinkle lightly with cinnamon.  Bake for 13 to 15 minutes, or until a delicate brown.




You can put 1 1/2 cups chopped celery into an applesauce cake.  I wonder if you can put it into streusel kuchen then?
